Corn Cruskits – Chicken, Sweet Potato & Lime Avocado (Low FODMAP)

Ingredients

  • 1/2 cup cubed, roasted sweet potato (Tip – use left-over roast/ mashed sweet potato)
  • 1/8 (30g) avocado, cubed
  • 50g shredded, skinless, BBQ chicken breast
  • 1 Tbsp fresh coriander, roughly chopped
  • 1 Tbsp lime juice
  • 2 Corn Cruskits

Method

  1. In a small bowl combine sweet potato, avocado, shredded chicken, coriander and lime juice.
  2. Top Cruskits with sweet potato mix.
