Corn Cruskits – Egg, Mayonnaise and Chives (Low FODMAP)

2 medium eggs
1 Tbsp whole egg low-fat mayonnaise
2 tsp finely chopped chives
2 Corn Cruskits
Place the eggs in a saucepan of cold water. Place the pan over medium heat. Bring to a gentle simmer. For hard-boiled eggs, simmer for 8 minutes. Use a slotted spoon to remove the egg from the water and refresh under cold water.
Cool and peel.
Mash eggs with a fork, add mayonnaise.
Place egg mixture on Cruskits and top with chives.
