Corn Cruskits – Egg, Mayonnaise and Chives (Low FODMAP)

  • 2 medium eggs
  • 1 Tbsp whole egg low-fat mayonnaise
  • 2 tsp finely chopped chives
  • 2 Corn Cruskits


  1. Place the eggs in a saucepan of cold water. Place the pan over medium heat. Bring to a gentle simmer. For hard-boiled eggs, simmer for 8 minutes. Use a slotted spoon to remove the egg from the water and refresh under cold water.
  2. Cool and peel.
  3. Mash eggs with a fork, add mayonnaise.
  4. Place egg mixture on Cruskits and top with chives.
