Golden Granita Fruit Balls

Ingredients

1 x 250g packet Arnott’s Granita biscuits, crushed
1 x 375g packet fruit medley
1 cup desiccated coconut
2 cups rice bubbles
1 x 395g can sweetened condensed milk
75g butter, chopped
2 tbsp golden syrup
1 cup shredded coconut, to roll

Method

  • In a bowl, combine biscuits, fruit, desiccated coconut and rice bubbles.
  • Place condensed milk, butter and syrup in a saucepan. Cook over medium heat (2-3 minutes) stirring constantly until butter melts. Continue cooking and stirring for 3 minutes. Pour over dry ingredients and mix well. Cool slightly.
  • Roll spoonfuls into balls and toss in shredded coconut until coated. Place onto a tray and refrigerate for 30 minutes or until firm.

For a Christmas twist:

  • Toss in 50g of cinnamon sugar instead of coconut. Place a dried cranberry into top of ball before refrigerating.
