Arnott's Marie Lemon Tart

Ingredients

1 packet Arnott’s Marie biscuits, crushed
1/4 cup dessicated coconut
160g butter, melted
300mls thickened cream
½ cup caster sugar
5 eggs
1 tbsp lemon zest
zest and juice of 2 lemons

Method

  • Preheat oven to 180°C.
  • In a bowl, combine crushed biscuits and coconut. Pour in melted butter and mix until combined.  Press firmly, and evenly, onto base and sides of a 25cm flan tin with removable base. Bake for 15 minutes. Remove from oven and let cool slightly.
  • Meanwhile in a large bowl, whisk together cream, sugar, eggs, lemon zest and lemon juice. Allow to stand for 5 minutes. Pour over biscuit base. Bake for 25 minutes or until filling is set. Remove and leave to cool before slicing. Serve with cream, if desired.
