Sao Crusted Bacon Quiche

Ingredients

1 tbsp oil
1 onion, finely diced
4 rashers bacon, chopped
1 ½ cups grated cheddar cheese
6 eggs, lightly beaten
1 cup cream
10 Arnott’s Sao biscuits, crushed

Method

  •  Preheat oven to 180°C. Grease a 24cm round quiche, or pie, dish and line base with non-stick baking paper.
  • Heat oil in a frying pan over medium heat. Add onion and cook for 3 minutes or until softened. Add bacon and cook for 3 minutes.
  • Place into a large bowl and let cool slightly. Add cheese, eggs and cream and stir until combined. Stir in crushed Arnott’s Sao biscuits then pour into quiche dish. Bake for 25 minutes or until golden and egg has set. Remove from oven and let stand for 5 minutes. Cut into slices and serve with a fresh green salad.
