Arnott's Trifle Surprise

I serve this at dinner and everyone always comes back for more.

Ingredients

1 x 250g packet Arnott's Sweet Plain Biscuits (Scotch Finger biscuits work well)
425g can of fruit of choice (preferably raspberries), drained
1 x 85g packet port wine jelly crystals
600g carton ready made thick custard
600ml whipping cream, whipped

Method

Place the jelly crystals into a measuring jug and make up to 500ml with boiling water. Leave to cool slightly.

Break the biscuits up into small pieces and put them into a large serving dish. Soak the biscuits in sherry, if desired, using as much or as little as you like.

Cover this with the port wine jelly mix and fruit, and allow to set (approximately 1 hour).

Cover the set jelly mixture with custard and then the whipped cream. Top with fruit pieces of choice(usually strawberries)to decorate.
