Lemon Coconut Slice

Ingredients

1 x 250g packet Arnotts Morning Coffee biscuits

LEMON COCONUT FILLING:
125g (½ block) Copha, melted
400g can sweetened condensed milk
1½ cups desicated coconut
¼ cup lemon juice
1 tbs grated lemon rind
extra desiccated coconut

LEMON ICING:
20g Copha,melted
1½ cups sifted icing sugar
½ tsp lemon juice
½ tsp vanilla essence
3-4 tbs hot water

Method

  • Line the base of a 19x20 cm shallow cake tin with non-baking paper. Place a layer of biscuits into the base of the tin, cutting to fit if necessary.
  • Place condensed milk, coconut, lemon juice and lemon rind in a bowl. Add melted copha and mix to combine.
  • Spread mixture over biscuit base and top with another layer of biscuits
  • For the icing: Place icing sugar, lemon juice and vanilla essence in a bowl. Add melted Copha and mix to combine. Beat in sufficient hot water to make a smooth paste. Spread icing on top of slice and sprinkle with extra coconut.  Allow to set at room temperature. Cut into squares and store in an airtight container in the refrigerator.
