Lemon Slice

Ingredients

1 x 250g packet Marie biscuits, crushed
125g butter
juice and finely grated rind of 1 lemon
1 cup dessicated coconut
1/2 x 395g can condensed milk
1 1/2 cups icing sugar
juice of 1 lemon, extra

Method

  • Place condensed milk and butter in a saucepan and heat over low heat, stirring, until butter is melted.
  • In a bowl combine crushed biscuits, lemon rind and juice, coconut.  
  • Stir in heated condensed milk mixture - if mixture is dry add a little more condensed milk until just moist enough to press into tin without being crumbly. Press into a slice tin, that has had base and sides, lined with non-stick baking paper.
  • Add icing sugar to a small bowl, then gradually add  extra lemon juice until a spreadable consistency. (If too thick add more lemon juice, if too thin add a little more icing sugar). Spread over biscuit mixture. Then Place into the refrigerator for 4 hours or until set. Cut into slices and serve.
