Yo Yo Jelly Slice

Ingredients

1 packet Arnotts Yo YO biscuits
4 tbsp butter, melted
juice of 2 lemons
1 dessertspoon gelatine
1 packet raspberry jelly
1 x 375g can condensed mik

Method

  • Place biscuits into a food processor and process to a fine crumb.
  • In a bowl combine crushed biscuits and melted butter and press into a lamington pan, then place into refrigerator to chill until required.
  • Using an electric mixer, beat lemon juice and condensed milk until combined. Stir in elatine (dis. in 1/2 cup water) and spread onto the above mixture. Refrig until set.
  • In a heatproof bowl or jug dissolve gelatine with a little boiling water, stirring until dissolved.
  • In another heatproof bowl dissolve jelly with 1 1/2 cups of hot water. Let cool then pour on top of condensed milk mixture. Return to fridge for 1 - 2 hours or until set. Cut into slices and serve.
