Make this delicious tomato salad using Arnott's Vita Weats as a crouton replacement
Step 1 Pre heat oven to 200°C. line a baking tray with baking paper. Place capsicums on tray and roast for 30 minutes or until skin of capsicum is starting to blister and blacken.
Step 2 Remove from oven, cover with foil until cool. Remove skin and seeds when cool enough to handle. Slice and set aside.
Step 3 Combine tomatoes, onion, roasted capsicum, balsamic vinegar and olive oil. Garnish with Basil leaves.
Step 4 Serve topped with Vita Weat croutons
