Healthy lunch ideas with Vita‑Weat

Vita-Weat with Avocado & Chickpea Smash

  • PREP TIME: 10mins

INGREDIENTS:
4 x Vita-WEAT Soy & Linseed crispbreads
8 x slices avocado
4 x cos lettuce leaves
1/2 x cup chickpeas, drained, roughly smashed

METHOD:
1. Top each Vita-Weat with a cos lettuce leaf & 2 slices avocado. Add a tablespoon chickpeas smash & sliced red onion.

Tuna & Smashed Avocado

  • PREP TIME: 10mins
  • COOK TIME: nil
  • SERVES: 1

INGREDIENTS:
4 x Vita-Weat 9 Grains Crispbreads
1 x Avocado
1 x Tin of Serena Tuna

METHOD:
1. Mash Avocado in a bowl and drain Tuna

Roast pumpkin & avocado

  • PREP TIME: 10mins
  • COOK TIME: nil
  • SERVES: 1

INGREDIENTS:
4 x Vita-Weat Pumpkin Seed & Grains crispbreads
1 x cup roasted pumpkin, roughly mashed
8 x slices avocado
Cracked black pepper, to taste

METHOD:
1. Top each Vita Weat with roasted pumpkin & 2 slices avocado. Season with cracked black pepper.

Hummus & cucumber

  • PREP TIME: 10mins
  • COOK TIME: nil
  • SERVES: 1

INGREDIENTS:
4 x Vita-Weat Soy & Linseed crispbreads
2 Tbsp hummus
1 small Lebanese cucumber, thinly sliced
Red onion, finely diced, to taste

METHOD:
1. Spread hummus on each Vita-Weat. Top with sliced cucumber & red onion to taste
