Ingredients

Cupcakes


  • Arnott’s Bluey Biscuits
  • 2 cups self-raising flour
  • 3/4 cup caster sugar
  • 2 eggs, lightly beaten
  • ¾ cup milk
  • 125gm butter, melted and cooled for 10 minutes
  • 1 tsp vanilla extract
  • ¼ cup choc chips

Buttercream


  • 250 gm butter, softened
  • 3 cups icing sugar
  • 3 tbsp milk or water
  • Purple food colouring
  • Coloured sprinkles (pink & yellow)

Preparation

Step 1
Preheat the oven to 187 C⁰ fan forced. Line a 1/3 cup muffin tin with 12 cases.
Step 2
Sift flour into a medium bowl. Add sugar, stir, and make a well in the centre.
Step 3
Add milk, cooled butter, eggs, and vanilla to flour mixture. Stir gently to combine. Fill cases 2/3 full and bake for 16-17 minutes.
Step 4
Buttercream – Beat butter in a medium bowl with electric mixer until light and fluffy. Beat in sifted icing sugar and milk or water. Add colouring and spread icing over the cooled cakes. Top with Arnott’s Bluey biscuits and sprinkles.
