Ingredients

Cherry Slice  Base


  • 250g Scotch Finger 
  • 100g butter 
  • 1 tsp cinnamon 
  • 680g morello cherries in syrup 
  • 2tsp cornflour 

Crumble


  • 50g butter, finely chopped
  • ⅓ cup brown sugar 
  • ⅓ cup desiccated coconut 
  • 2 tbs self raising flour 

Preparation

Step 1
Pre heat oven to 180°C fan-forced. Grease and line a 20cm square tin. 
Step 2
Place Arnott’s Scotch finger and cinnamon in the bowl of the food processor and process until it resembles crumbs. Add melted butter. Pulse until combined add to tin and spread evenly using the back of a spoon. 
Step 3
Drain cherries, reserve liquid and return half a cup back into a small saucepan with drained cherries. Bring to the boil.
Step 4
In a small cup combine cornflour with 2 tsp of cold water, mix until smooth. Add this to the cherries and bring to the boil, stir until thickened. Spread over the scotch layer. 
Step 5
Meanwhile to make the crumble mixture, Place butter, sugar, coconut and flour in a medium bowl and using your hands, rub together until combined.
Step 6
Sprinkle this mixture over the cherry layer and bake for 25 mins or until golden.  Cool then chill until cold. Cut into squares.
