Step 1 Place 1 pkt of Tim Tam in a food processor and process until it resembles fine crumbs. Add melted butter, process until combined. Press into a base of a lined 22 cm (base measurement) springform tin. Place in refrigerator to chill.
Step 2 Place gelatine and 2 tbsp hot water in a heat proof jug and place jug in a container of hot water, stir until combined. Place cream cheese in a mixer, add caster sugar and beat until combined.
Step 3 Add cream, beat until combined. Add gelatine mixture, beat on low to combine
Step 4 Stir through 6 chopped Tim Tam. Pour cheesecake filling over base. Chill for 4 hours or overnight if possible.
Step 5 Place chocolate in a small bowl and microwave on medium power for 1 minute or until melted. Drizzle over chilled cheesecake. Top with extra chopped Tim Tam.
