Sao and Bacon Quiche

Ingredients

  • 1 tbsp oil
  • 4 bacon rashers, finely chopped
  • 1 small onion, finely chopped
  • 1/2 pkt Arnott's Saos, plus 2 extra, lightly crushed
  • 2 cups coarsely grated cheddar cheese
  • 40g butter
  • 7 eggs
  • 1/2 cup (125mL) thickened cream

Preparation

Step 1
Preheat oven to 200°C/180°C fan-forced. Grease and line a 20cm round cake pan with baking paper.
Step 2
Heat oil in a medium frying pan on high. Cook bacon for 3-4 mins until it starts to brown. Add onion and cook, stirring for 2-3 mins until softened. Set aside.
Step 3
Meanwhile, place Saos in a food processor and crush until fine. Add 1 cup grated cheese and butter and pulse until well combined. Press into base of prepared pan.
Step 4
Bake for 10 mins.
Step 5
In a bowl, whisk together eggs, cream and remaining cheese. Season to taste.
Step 6
Sprinkle bacon mixture over base and pour over egg mixture. Sprinkle top with extra crushed Saos.
Step 7
Bake for 35-40 mins until golden and firm. Stand in pan for 15 mins before turning out. Cut into wedges and serve with salad.
