Wagon Wheels Mini

Ingredients

  • 190g Arnott’s Wagon Wheels, mini’s
  • 150g dark chocolate melts
  • 100g unsalted butter
  • 2 large eggs
  • 135g caster sugar
  • 65g brown sugar
  • 65g plain flour

Preparation

Step 1
Pre-heat oven to 160⁰c fan-forced.
Step 2
Line 6 Texas muffin pan with cases. Finely chop 2 Wagon Wheels biscuits and set aside to stir through.
Step 3
Place chocolate and butter in a medium size microwave safe bowl. Heat in microwave for 1 min intervals on medium power, stirring in between until melted.
Step 4
In a large bowl, combine eggs, caster sugar and brown sugar. Stir in chocolate mixture. Add the flour. Stir through chopped Wagon Wheels biscuits. Divide mixture between muffin pan and top with 1 Wagon Wheels biscuit. Bake for 30 min.
Step 5
Allow to cool, then serve.
Step 6
Serve cakes topped with ice-cream and an extra half a Wagon Wheels mini.

Notes

  • Cover cakes with foil for last 5-10 minutes of baking time
  • so the Wagon Wheels don't overcook
