Apricot, Shredded Wheatmeal and Macadamia Balls

Simple to make and the perfect snack combination of Apricots, Macadamias and Shredded Wheatmeal biscuits.

Note: Arnott’s Shredded Wheatmeal not available in New Zealand.


Ingredients

  • 1 cup dried apricots, chopped
  • 1/2 cup macadamias
  • 1/2 pkt 125g Arnotts Shredded Wheatmeal biscuits
  • 1/2 cup desiccated coconut, plus 1/3 cup for rolling
  • 2 Tblsp honey
  • 1 Tblsp water

Preparation

Step 1 Place apricots in a food processor. Process until finely chopped. Add macadamias and Arnotts Shredded Wheatmeal biscuits until finely crushed, then remaining ingredients until mixture sticks together. Add a little extra water if needed.


Step 2 Roll level tablespoons of mixture into balls and toss in coconut. Chill until ready to serve.
