Need inspiration for Australia Day or any day? You cannot miss this twist on the Lamington known at Arnott's as the Tim Tamington.
Step 1 Remove whole container of ice cream onto a chopping board. Cut ice cream into 11 6cm x 3cm rectangle size pieces. Place on a tray lined with baking paper. Freeze for 1 hour or until firm.
Step 2 One at a time, cut Tim Tams in half, horizontally, with a small sharp knife. Sandwich with one piece of ice cream. Place on a tray lined with baking paper. Repeat with remaining biscuits and ice cream to make 11 sandwiches.
Step 3 Freeze for at least 4 hours, or until very firm.
Step 4 To make icing, combine all ingredients in a medium bowl. Stir well to combine. Cool slightly.
Step 5 One at a time, dip biscuit sandwiches into icing, allowing excess to drip away, then into coconut to coat. Return to tray. Freeze until firm.
