Ingredients

Banana Cake


  • Arnott’s Bluey Honey and Oat Biscuits
  • 180g butter, at room temperature
  • 1 cup brown sugar
  • 3 eggs
  • 1 tsp vanilla
  • 4 medium bananas’, mashed (about 11/2 cups)
  • 2 cups self-raising flour

Buttercream


  • 250 gm butter, softened
  • 3 cups icing sugar
  • 3 tbsp milk
  • Blue food colouring

Preparation

Step 1
Pre heat oven to 160 ⁰C fan forced. Grease and line a square 20 x 20 cm cake tin. Set aside.
Step 2
Use electric beaters to beat butter and sugar in a medium to large bowl until pale. Add eggs, 1 at a time, beating well after each addition add vanilla. Fold in banana’s and stir in flour.
Step 3
Pour mixture into tin. Bake for 50-55 minutes or until firm to touch. Stand cake for 5 minutes then transfer to a wire rack to cool completely before icing.
Step 4
Buttercream – beat butter in a medium bowl with electric mixer until light and fluffy, beat in sifted icing sugar and milk or water. Add blue colouring until desired blue and spread icing over the cooled cake and top with Arnott’s Bluey biscuits.

Notes

  • Tip Make sure cake is completely cooled before icing. This can take up to an hour.
