Ingredients

  • 250g packet Arnott’s Milk Arrowroot biscuits
  • 150g butter, melted
  • 395g can sweetened condensed milk
  • ½ cup lemon juice
  • ½ cup boiling water
  • 1 ½ tsp gelatine
  • 2 x 85g packet blueberry jelly
  • Arnott’s Bluey biscuits to decorate
  • Umbrellas, sour straps, and Jelly rings to decorate

Preparation

Step 1
Grease and line a 20cm Springform pan with baking paper. Place biscuits in the bowl of food processor and process until fine crumbs. Add butter and process until combined. (Keep 1/3 cup aside for decorating).
Step 2
Press mixture firmly into the base and refrigerate whilst preparing the filling.
Step 3
In a medium bowl combine condensed milk and lemon juice. Mix well. Combine water and gelatin in a small jug.
Step 4
Stir until completely dissolved, pour gelatine mixture into condensed mixture stir well, pour mixture over chilled biscuit base. Return to refrigerator until set.
Step 5
Meanwhile, prepare jelly according to packet instructions, using 200ml less cold water than directed. Allow to come to room temperature, approx. ½ hour. Pour jelly mixture over condensed milk base.
Step 6
Chill for a further one hour or until jelly is set. Decorate with sour straps, umbrellas, jelly rings and Bluey biscuits.

Notes

  • allow time for all the layers to chill
  • pour jelly over the back of a spoon when pouring it over condensed milk base to ensure a smooth base.
