Arnott’s Easy Lemon Crisp Pavlova

If you love lemon meringue, you’ll love this light, summery pavlova recipe made with Arnott’s Lemon Crisp.

While slightly unexpected, the salted cracker and tangy lemon cream of the Lemon Crisp pair perfectly with the sweetness of meringue, making the perfect summer crowd-pleaser.

To save time we’ve used a readymade pavlova base so all you need to do is add the toppings!

  • Readymade Pavlova Base
  • 600 ml thickened cream
  • 250 g Arnott’s Lemon Crisp
  • ¼ cup lemon curd
  • ¼ cup fresh mint leaves
  • Dried lemon to garnish (optional)


Step 1
In a large bowl beat cream using an electric mixer until you get soft peaks. (This usually take 2-3 minutes.) If you don’t have time to whip cream, you can use double cream.
Step 2
Roughly chop 2/3 pack of Lemon Crisp biscuits, set aside ready to decorate.
Step 3
Place the pavlova base onto a cake stand or platter. Smooth a generous portion of whipped cream over the top and drizzle over lemon curd. If your lemon curd is very thick, heat in microwave for 30 seconds using a microwave safe bowl.
Step 4
Decorate with chopped biscuits, mint, and lemon slices.
