Line base and sides of a 20 cm x 20 cm square cake tin with baking paper, extending the paper 2 cm up the sides for easy removal and slicing. Line biscuits face side down in 2 rows with 5 biscuits lined vertically and 2 biscuits lined horizontally.
Combine custard powder and sugar in a small saucepan over low heat and add a small amount of the milk to form a paste. Gradually whisk in remaining milk, continuing for 2 minutes or until the mixture thickens. Transfer to a large heatproof bowl.
Cover the surface with plastic wrap and place in the fridge for 30 minutes to chill. Use an electric beater to beat the custard until smooth. Add cream and continue to beat until soft peaks form.
Spread the custard mixture over the biscuits and top with another 12 biscuits. Be careful not to move the tin to ensure that biscuits line up. Chill for approximately 2-3 hours or until the custard has set.
To serve, remove from the tin and cut them into slices. Tidy the side with a spatula or butter knife.
The biscuits will soften over time- so the slice is best eaten on the day it’s made.
