  • 2 x 250g pkt Arnott’s Marie biscuits
  • 2 x 600ml thickened cream
  • 250ml milk
  • 2 tsp vanilla extract
  • 1 1/2 cups mixed frozen berries
  • 2 tbsp sugar


Step 1
Lightly grease a 24.5cm (base measurement) springform pan. Line base with baking paper.
Step 2
Combine milk and vanilla in a jug.
Step 3
Place cream in a large bowl and beat with electric beaters until firm peaks form.
Step 4
Dip each biscuit into the milk mixture and place in springform pan. Place over base, breaking biscuits to fit. Smooth over ½ cup whipped cream. Prepare another layer of biscuits and top with cream.
Step 5
Continue with biscuits, milk mixture and cream until all biscuits are in the pan. Cover with cream. Reserve leftover cream. Cover and chill for 8 hours.
Step 6
Flip onto a plate and remove paper. Cover with remaining cream.
Step 7
In a medium saucepan combine berries and sugar. Stir berries and sugar. Bring to a boil and simmer for 5 minutes. Chill before serving.
