Ingredients

  • 250g packet Arnott’s Milk Coffee biscuits
  • ¾ cup (180ml) hot espresso coffee
  • ¼ cup (60ml) Tia Maria coffee liqueur
  • 2 tblsp caster sugar
  • 300ml thickened cream
  • 250g mascarpone
  • 1 tblsp cocoa powder

Preparation

Step 1
Combine the espresso coffee, Tia Maria and sugar, stir to dissolve sugar, set aside.
Step 2
Beat cream in small bowl with electric mixer until soft peaks form: gently fold mascarpone into cream until combined and smooth.
Step 3
Take 10 Milk Coffee biscuits and soak each biscuit in the coffee mixture for 30 seconds or until they start to soften. Cover the base of a 20cm square shallow dish with softened biscuits, halving biscuits if necessary, to fit in the dish.
Step 4
Top with a third of the cream mixture and dust with some of the cocoa. Repeat this process with remaining biscuits and cream, finishing with a layer of cream. Dust with cocoa.
Step 5
Refrigerate overnight. Slice into squares with a sharp knife and serve.
