This Vita Weat crusted salmon recipe is not only delicious but easy to make!
Step 1 Preheat oven to 180°C. line an oven tray with baking paper.
Step 2 Place Vita Weat in a food processor and pulse into fine crumbs. Transfer to a medium bowl and Set aside.
Step 3 Crack egg in a medium bowl and whisk lightly with a fork.
Step 4 Dip salmon fillet in egg then dip into vita weat crumbs. Place salmon on tray, spray with olive oil and bake for 12-13 mins.
Step 5 Combine yogurt and lemon rind in a small jug. Season with salt and pepper.
Step 6 Serve Salmon with yogurt dressing and baby rocket.
