Ingredients

  • 310g Arnott’s Farmbake Butter Shortbread cookies
  • 80g Butter, melted
  • 395g can Sweetened condensed milk
  • ½ cup Lemon juice
  • ½ cup Boiling water
  • 1 ½ tsp Gelatine
  • 85g Raspberry jelly

Preparation

Step 1
Grease and line, base, and sides of a 18cm x 28cm slice pan with baking paper, extending 2 cm above the edge of the pan.
Step 2
Place Arnott’s Farmbake Butter Shortbread cookies in bowl of food processor and process to a fine crumb, add melted butter and pulse until combined. Press biscuit mixture into base of prepared tin and refrigerate whilst preparing the filling.
Step 3
In a medium bowl combine condensed milk and lemon juice. Mix well. Combine water and gelatin in a small jug. Stir until completely dissolved, pour mixture into condensed mixture, pour over biscuit base. Return to refrigerator until set.
Step 4
Meanwhile prepare Jelly according to instruction but prepare with 100ml less cold water than directed. Cool slightly then pour over condensed layer. Chill until set. Carefully remove from slice pan and cut into pieces.
