Ingredients

Marshmallow Slice Base


  • 310g Arnott’s Farmbake Chocolate Chip Fudge cookies
  • 100g Unsalted butter, melted

Marshmallow Slice Topping


  • 150g Pink marshmallows
  • 1 tblsp Milk
  • 200ml Double cream
  • 180g Milk chocolate
  • 1 tblsp Veg oil

Preparation

Step 1
Grease and line a 28 cm x 18 cm slice pan. Line base and sides with baking paper, extending paper 3cm above pan edges.
Step 2
Process Arnott’s Farmbake Chocolate Chip Fudge cookies in a food processor until finely crushed. Add butter. Process until combined. Press over base of prepared pan. Refrigerate while making filling.
Step 3
To make marshmallow filling, combine marshmallows and milk in a small saucepan over a low heat. Stir until marshmallows have melted. Don’t boil. Remove from heat. Set aside to cool stirring occasionally.
Step 4
Beat cream until soft peaks, stir through half the cream into marshmallow mixture, stir through remaining cream. Stir until all combined. Pour over biscuit base and refrigerate until set.
Step 5
Place chocolate and oil in a small bowl and microwave on medium heat for 40 second bursts until melted. Stir and pour over marshmallow layer. Sprinkle with 100 & 1000’s. Return to fridge to set. Cut into pieces to serve.
