Peppermint Slice Base

  • 310g packet Arnott’s Farmbake Chocolate Chip Fudge cookies
  • 125g Unsalted butter, melted
  • 2 tbsp Dessicated coconut

Peppermint Layer

  • 2 cups Icing sugar mixture
  • 40g Unsalted butter, melted
  • 5 tsp Boiling water
  • 1 tsp Peppermint extract

Chocolate Layer

  • 180 gm Dark chocolate
  • 20 gm butter


Step 1
Grease a 28cm x 18cm slice pan. Line base and sides with baking paper, extending paper 3cm above pan edges.
Step 2
Process Arnott’s Farmbake Chocolate Chip Fudge cookies in a food processor until finely crushed. Add butter and coconut. Process until combined. Press over base of prepared pan. Refrigerate while making filling.
Step 3
To make peppermint filling, combine icing sugar and butter, and peppermint and slowly add boiling water 1tsp at a time. Mixture will become thick. Spread over biscuit base using the back of a spoon and refrigerate until set.
Step 4
Place chocolate and butter in a small bowl and microwave on medium heat for 40 second bursts until melted. Stir until smooth and pour over peppermint layer. Return to fridge to set. Cut into pieces to serve.
