These lime and coconut truffles are a delicious sweet treat to have or to bring out when entertaining! And they are made with Arnott's Gluten Free Scotch Fingers!
Step 1 Process Arnott’s gluten free Scotch Finger biscuits until crushed. Transfer to a bowl. Add coconut, condensed milk and lime zest. Mix well then roll 2 teaspoons of mixture into balls. Place on a tray and chill until firm.
Step 2 Combine white chocolate and oil in a small bowl. Using 2 forks, dip truffles into chocolate then place on a baking paper-lined tray. Sprinkle tops with a little extra lime zest. Chill until set.
