Ingredients

Base


  • 250g pkt Arnott’s Butternut Snap biscuits, finely crushed
  • 100g butter, melted

Topping


  • 500g cream cheese, softened
  • 1/2 cup caster sugar
  • 300 ml thickened cream
  • 1 tbsp gelatine
  • 1/3 cup espresso coffee
  • coffee beans to garnish

Preparation

Step 1
Lightly grease and line a 28cm x 18cm slice pan.
Step 2
Place crushed biscuits in a bowl. Stir in butter until combined. Press evenly into pan. Chill whilst making topping.
Step 3
Topping: In a bowl, using an electric mixer, beat cream cheese until smooth. Gradually beat in sugar, beating well then add cream. Beat for 1 minute.
Step 4
Meanwhile in a small jug, combine gelatine and hot coffee, stir until dissolved. Add to cream cheese mixture. Beat gently until combined and fluffy.
Step 5
Pour mixture over base and gently smooth surface. Cover and chill for 6 hrs or overnight until set. Cut into pieces and garnish with coffee beans.
