Arnott's No Bake Coffee Cheesecake Slice, this delicious recipe is wonderfully light, as any cheesecake should be- with a rich coffee flavour. Perfect for sharing with friends at picnics.
Step 1 Lightly grease and line a 28cm x 18cm slice pan.
Step 2 Place crushed biscuits in a bowl. Stir in butter until combined. Press evenly into pan. Chill whilst making topping.
Step 3 Topping: In a bowl, using an electric mixer, beat cream cheese until smooth. Gradually beat in sugar, beating well then add cream. Beat for 1 minute.
Step 4 Meanwhile in a small jug, combine gelatine and hot coffee, stir until dissolved. Add to cream cheese mixture. Beat gently until combined and fluffy.
Step 5 Pour mixture over base and gently smooth surface. Cover and chill for 6 hrs or overnight until set. Cut into pieces and garnish with coffee beans.
