Scotch Finger

Ingredients

  • 250g Arnott’s Scotch Finger biscuits
  • 1.3L chocolate ice cream
  • 1/3 cup mini marshmallows
  • 1/3 cup crushed nuts
  • 1/2 cup cranberries

Preparation

Step 1
Line a 24 x 13 x 6.5 cm loaf pan with cling wrap. Lay 5 Scotch Finger biscuits in the base of the pan. Finely chop remaining biscuits and set aside.
Step 2
Place softened ice cream in a large bowl. Add chopped biscuits, mini marshmallows, nuts, and cranberries. Stir until well combined.
Step 3
Spoon into loaf pan and freeze for at least 4-6 hours or overnight. To serve, turn out onto a platter and slice.
