Creamy, luscious and full of chocolate, our Tim Tam mousse is sure to satisfy any dessert craving! Incredibly light yet full of flavour, this recipe is sure to impress any friend, family member or special loved one in your life!
Step 1 Place chocolate and butter in a heatproof, microwave safe bowl. Microwave on medium-low, for 30 second intervals until melted and smooth. Set aside for 2 minutes. Stir in egg yolks.
Step 2 Meanwhile, place 200ml cream into a medium size bowl. Using an electric mixer, beat the mixture until soft peaks form.
Step 3 In a separate bowl and with clean beaters, beat egg whites till it forms soft peaks. Gently fold 1/3 of the egg whites into the chocolate mixture. Mix well then transfer mixture into the remaining egg whites, stirring well until it is smooth.
Step 4 Start to add the whipped cream into the chocolate mixture.
Step 5 Finely chop 6 Tim tams and fold them into the mousse. Spoon the mousse into glasses. Refrigerate for 3 hours or until firm.
Step 6 Beat remaining 100ml of cream till it forms soft peaks. Top mousse with extra cream, chopped Tim Tams and extra grated chocolate.
