Ingredients


  • 6 x Arnott’s Mini Wagon Wheel
  • 300ml thickened cream, whipped
  • 1 tsp vanilla bean paste
  • 250g mascarpone
  • 125g fresh raspberries
  • 125g fresh blueberries

Coulis


  • 1 cup frozen raspberries
  • 2 tbsp icing sugar

Preparation

Step 1
Cut 2 Wagon Wheel biscuits in half and set aside, finely chop remaining Wagon Wheel biscuits and set aside.
Step 2
In a small saucepan combine raspberries and icing sugar, bring to a boil, simmer until berries have softened. Set aside to cool.
Step 3
Gently fold cream and vanilla bean paste through mascarpone; if your mascarpone is thick, add a little extra thickened cream.
Step 4
To assemble, layer mascarpone cream, coulis, crumbed biscuits, and fruit, into your favourite glass (x4).
Step 5
Top with a halved Wagon Wheel biscuit and serve immediately.
